橙汁羅望薯球

使用酸子醬做複合調味,賦予冷凍薯球不一樣的風味。Using tamarind sauce for a complex flavor profile, giving the frozen potato balls a unique taste.

  • 1.取一油鍋,熱油至170~180度油溫後,將薯球炸酥即可取出靜置。Heat oil in a pan to 170-180 degrees Celsius, then fry the potato balls until crispy. Remove and set aside.
  • 2.將鳳梨片對切成長條型,並且用平底鍋煎香,煎香完成後,再撒抹上檸檬葉末備用。Cut pineapple slices into long strips and pan-fry them until fragrant. Once done, sprinkle with lemongrass powder and set aside.
  • 3.取一只手把鍋,將調味料混合後,開小火煮融至稠化即可,並隔水冰鎮備用。In a saucepan, mix the seasoning ingredients and cook over low heat until thickened. Remove from heat and cool in an ice bath.
  • 4.取一平底鍋將醬料倒入後加熱並加入薯球翻炒收汁即可盛裝至容器,並且點綴鳳梨丁後再補上檸檬葉
  • 末與辣椒粉就完成了。Heat the sauce in a skillet, add the fried potato balls, and stir-fry until coated and the sauce thickens. Transfer to a serving dish, garnish with diced pineapple, and sprinkle with emongrass powder and chili powder. Your dish is ready to serve.
